Ranger Cookies
Ingredients
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 egg
- ½ cup shortening
- ½ tsp vanilla
- 1 cup flour
- ½ tsp soda
- ¼ tsp baking powder
- ¼ tsp salt
- 1 cup quick cooking oats
- 1 cup fortified whole wheat flakes cereal
- 1 cup chocolate chips
Directions
- Preheat oven to 375. Mix sugars, egg, shortening and vanilla thoroughly.
- Stir in flour, baking soda, baking powder, salt, oats, wheat flakes and chocolate chips.
- Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake 9-11 minutes until set but not hard. Cool about 3 minutes on baking sheet.
Variations:
Add ½ cup shredded coconut.
Add ¼ teaspoon almond extract.
