Potato & Corn Chowder

line Here’s another favorite – chowder. I have been trying to find a recipe for cheesy chowder that I tried 8 years ago, and this one came pretty close. It’s another great slow cooker recipe and it tastes amazing.

Ingredients

  • 1-1/2 pounds yellow potatoes, cut into 1/2-inch pieces
  • 1 small onion, chopped
  • 1 can creamed corn
  • 1 pound frozen corn
  • 3 slices bacon, cooked and chopped into small pieces
  • Black pepper, to taste
  • 2 cups chicken stock
  • 3 cups water
  • 2 cups half and half
  • 1 cup monterey jack cheese
  • 1 cup pepper jack cheese
  • 1/3 cup sliced green onions

Directions

  1. Add potatoes, onion, both corns, bacon, pepper, stock and water to a crock pot and cook on low 8-10 hours.
  2. Add half and half, cheeses and green onion and cook an additional 15-30 minutes.
