Mac n’ Cheese Soup
I made this soup with buffalo chicken “fries” for some friends last week. Essentially it’s macaroni and cheese with a lot of sauce, and they call it a soup. But, it’s tasty!
This is another recipe from one of my friends. Jaime made it for dinner one night she hosted our Project Runway get-together. I liked it so much, I made it less than a week later. It’s easy, delicious and makes enough for leftovers for a couple of days. Or less if you eat a lot of it the first day. Not saying that happened.. not saying it didn’t…
Risha made this dish for me in Hawaii and I fell in love with the first bite. I never liked mushrooms growing up but those are my favorite part of this meal!
Last week we were having beautiful sunny and warm weather and I was ready to pull out the short sleeves, skirts and sandals. And then this week the storms hit – lightning at work yesterday; today was full of wind and rain and was just plain miserable. I blame that stupid groundhog who lies.
But lying rodents are a whole different post.
As I drove home one thing kept running through my mind – I want soup. I really want soup. I had been planning to make this recipe “soon” but hadn’t picked a day (my weekly menu planning has been a bit loose, but starting Sunday it’s going back on track) and I figured today was the day.
This recipe is so easy to make and super delicious. The best part is the surprise melty cheese at the bottom of the bowl. Yum.
