Whole Wheat Chili Mac

Growing up “chili mac” was one of our favorite meals. This consisted of: a box of macaroni and cheese (“KD” to my Canadian friends [Hi, Kate!]), a can of chili and sometimes some hot dogs. It was delicious and even now sometimes I get a craving for it. I love homemade mac & cheese, but sometimes you just want the boxed stuff. I think it’s a comfort food type of thing.

Anyway, I was searching recipes on Weight Watchers and found a chili mac recipe. I got all excited! But then I realized this chili mac is very different than my memories. Like, there is no cheese. But I decided to try it anyway and I was very happy with it. I think I might have to change the name to chili casserole or something, because chili mac means there is cheese in it (in my head). (Searching on the web site just now, looks like they also have a “cheesy” chili mac recipe – I think it just has grated cheese on top, which I did anyway. I also topped with a spoon of plain yogurt [or sour cream] and some green onions.)

Despite my disappointment, I did enjoy this meal and it was easy to cook. I switched it to turkey meat but you could use ground beef if that’s what you have. This is a very hearty dish and filled me up quick. Makes a wonderful winter meal!
