Butterscotch Chip Spice Cookies
Christmas flew by for me – I spent probably 85% of December knitting and the other 15% trying to fit in everything else. So, I never got around to doing a lot of Christmas baking (though I did make an awesome gingerbread house, I’ll upload photos soon since I haven’t yet!). I got a special Holiday Cookies magazine from Cuisine At Home and finally this week got around to trying one of the recipes. Yeah, it’s really good. Like, really, really good. The spices make it holiday but not so much that you couldn’t enjoy these cookies year round. In fact, I intend to. These are definitely a new favorite.
I really wasn’t sure what to expect from this stew. 1) I’ve never eaten African food before and b) the list of ingredients is odd. Green peppers. Sweet potatoes. Ginger root. Cayenne pepper. Peanut butter. Spinach. All together in a stew. But I gave it a try and guess what. It’s delicious.
These are a great alternative to gingerbread cookies. The combination of spices and chocolate will delight both children and adults.
This is the first time I’ve attempted gingerbread cookies. Mostly because I’ve never liked gingerbread. But these ones are chewy and soft, not hard and disgusting. Try them out! Make different shapes and have fun. I went with the classic gingerbread man, and did a few stars with the extra.
