Potato Hash with Spinach & Eggs
One of my very favorite things to eat is potatoes and eggs for breakfast, and hash is a great way to make it into a well-rounded meal. This hash I created combining some of my favorite flavors and would make a great dish to serve for any meal of the day.
Tuesday when I got home from my Weight Watchers meeting I was hungry but didn’t feel like spending too long making dinner. I selected this recipe because it’s fast and easy and it looked like it would taste good. Fast = yes. Easy = yes. Tastes good = yes. Success!
Yesterday I made some of the leftovers into a quick breakfast burrito in a whole wheat tortilla. I still have one more serving left and I’ll probably do the same.
I haven’t done a French dish for quite a while – it’s been like six months, right? So I figured it’s time. This one barely counts but it’s in the book so it does count. And it’s a new recipe so Kitchen Therapy, too!!
I really wasn’t sure how this one would turn out but I did like it. Honestly it’s a lot like “egg in a cup” we do in a microwave, but the cream adds a really nice smooth flavor and texture. Perfect for dipping with toast. This would be a great breakfast or brunch and was easy to make. Would be fun to do for friends!
