Corned Beef & Cabbage
I made this for my family for dinner on Sunday. I had intended to use some of the leftovers for a few other recipes including a really good hash. Only problem? There were no leftovers. Not of the corned beef and not even any of the veggies. Guess that’s what happens with my family! But, corned beef doesn’t have to be just for St. Patrick’s Day.. I’m definitely making this again. The slow cooker makes it so easy.
Last night I made these really great baked veggie wontons, which are a great substitution for the standard fried ones. Ok, I’ll admit – they aren’t AS good. But really, what could be better than something fried in oil? Maybe being my dream weight, so that’s why I’m sticking with this. They were definitely tasty and fun to make.
